Provolone is an aged pasta filata cheese originating in Campania near Vesuvius in Italy where it is still produced in pear, sausage, or cone shapes.

Our Provolone is semi-hard, 3-4 months aged pasta filata cow milk cheese, made in blocks of 10 kilos. A medium length cheese, buttery, mild with a hint of sweetness, this cheese is complex without being challenging. When the cheese is ready to be packed we cold smoke it with wood chips and Sangiovese leaves. The smokiness is distinct on the nose but doesn’t linger on the palate.

A favorite of ours is provolone melted over fresh bruschetta served with thin slices of Prosciutto di Parma with a glass of M/S Red.
